Equipment

  • 1 Food processor
  • 1 Mixing Bowl

Ingredients

  • 1 cup raw almonds (unsalted)
  • 1 cup dried apricots
  • 1/2 cup pitted dates
  • 1/4 cup shredded coconut
  • 1/2 tsp ground cinnamon (optional)

Instructions

  • Place all the ingredients into your food processor and pulse until the mixture forms a ball or it's very sticky
  • Tip the mixture into a bowl and roll into balls - I used a tbsp for each one and got approx 16 out of the mixture
  • Pop them into the fridge for at least 1 hr - then enjoy! I keep mine in the fridge and have been known to freeze them too! They'll keep in the fridge for at least 10 days ... if they last that long!
