Super Easy Apricot Energy Balls
These little balls of energy are superb to have in the fridge or freezer for when you need a quick, healthy snack or breakfast on the go. With only 5 ingredients – they are super tasty!
Super Easy Apricot Energy Balls
Delicious tasting bombs of goodness, bursting with vitamins and minerals such as potassium, calcium, iron, magnesium, vitamin C… and lots of other such yumminess! Pop a couple in your bag, lunch box or in the car for when you’re on the go and need a quick energy fix.
Equipment
- 1 Food processor
- 1 Mixing Bowl
Ingredients
- 1 cup raw almonds (unsalted)
- 1 cup dried apricots
- 1/2 cup pitted dates
- 1/4 cup shredded coconut
- 1/2 tsp ground cinnamon (optional)
Instructions
- Place all the ingredients into your food processor and pulse until the mixture forms a ball or it's very sticky
- Tip the mixture into a bowl and roll into balls - I used a tbsp for each one and got approx 16 out of the mixture
- Pop them into the fridge for at least 1 hr - then enjoy! I keep mine in the fridge and have been known to freeze them too! They'll keep in the fridge for at least 10 days ... if they last that long!
