Chickpea Sandwich Filler
An all-time favourite! A delicious sandwich filler made with chickpeas and mayonnaise.

- 1 can chickpeas - rinsed or 2 cups
- 2 tbsp vegan mayo bought or home-made
- 1 tbsp mustard I like dijon
- 3 stalks celery chopped finely
- 3 spring onions - finely chopped OR 1/4 red onion
- 1/4 tsp salt
- 1/4 tsp black pepper
Combine the chickpeas, celery, onions, mayonnaise, mustard, salt and pepper in a bowl.
Pile ontop of chosen sandwich bread or tortillas - or eat as a side dish
This will keep in the fridge for a few days. Spread it on bread, pile it into pittas, stuff it into wraps, dollop it on baked potatoes … enjoy!
