Dry fry the walnuts in a non-stick frying pan for a few minutes on a low heat
Remove walnuts from the pan when toasted
Add the olive oil to the pan and fry the onion and garlic until the onion is translucent - do not allow to colour
Add the mushrooms, parsley, rosemary, salt and pepper to the pan and combine
Cook for 5-10 minutes until the mushrooms are soft
Remove from the pan and allow the mixture to cool.
When cool, tip the mixture - along with the nuts into a food processor and blitz until combined and resembles a course pate texture
Place pate into a serving bowl and enjoy with crackers, flat breads, toast ....

A Sunday evening favourite in my house. We enjoy this yummy pate with crackers, pickles and salad. Any leftovers are spread on wraps/flatbreads, sprinkled with nutritional yeast, rolled up and devoured for snacks or supper.
