Walnut & Mushroom Pate


WALNUT & MUSHROOM PATE
A robust and flavoursome pate, crammed full of protein.
Ingredients
- 1 tbsp olive oil
- 1 cup walnuts
- 250 grams mushrooms - roughly chopped
- 1 large white onion - chopped
- 2 cloves garlic - minced or 1 tsp of garlic paste
- 2 tsp dried parsley
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/2 tsp salt
Instructions
- Dry fry the walnuts in a non-stick frying pan for a few minutes on a low heat
- Remove walnuts from the pan when toasted
- Add the olive oil to the pan and fry the onion and garlic until the onion is translucent - do not allow to colour
- Add the mushrooms, parsley, rosemary, salt and pepper to the pan and combine
- Cook for 5-10 minutes until the mushrooms are soft
- Remove from the pan and allow the mixture to cool.
- When cool, tip the mixture - along with the nuts into a food processor and blitz until combined and resembles a course pate texture
- Place pate into a serving bowl and enjoy with crackers, flat breads, toast ....
Notes
A Sunday evening favourite in my house. We enjoy this yummy pate with crackers, pickles and salad. Any leftovers are spread on wraps/flatbreads, sprinkled with nutritional yeast, rolled up and devoured for snacks or supper.
